Just wondering if there is a way to stay signed in on the computer without having to renter the password each time?

Yes, check the "Remember me" checkbox on the login window.

The "Remember me" box is checked but it only remembers the email, not the password. Without it staying signed in, we run into the problem of not being able to use the offline version for our remote location

If "Remember Me" is checked, you won't see the login screen again, it will auto-login at every launch until logged out.
